Sipping the Southwest: Agave, Sotol & Spirits

Sotol grows wild across the Chihuahuan Desert, and it has been distilled in this region for longer than most spirits get credit for. Unlike agave, it comes from a desert spoon plant that thrives in the same rocky ground White Spur calls home.
Our bar team builds cocktails around that sense of place. Agave and sotol both carry the character of the land, smoky in places, mineral in others, and they mix well with the citrus and chile notes that run through our menu.
Come sit at the bar and ask what is pouring. We rotate our spirits list to highlight small producers working the same desert we do.
